Sweet Potatos have recently been classified as an "Antidiabetic" food. If you want to know why, go HERE. They are delicious roasted with butter, salt and pepper.
The only way I'd eaten sweet potato was in a casserole until I married my dh. His family simply baked, peeled, put some butter on them and ate them! Yum! I am now a convert! I love them. In China they roast sweet potatoes in barrels on the street and you can buy them from a vendor. We saw lots of people eating warm sweet potatoes. They peel them like a banana ... well... you get the idea.
Also I enjoyed your series of Easter snow pictures! This will be one Easter you'll always remember!
They are also quick and easy to steam. Cut them into 2 in cubes, steam over salted water until just fork tender, then you can sprinkle with salt and pepper, Cinnamon and Ginger, or mash with butter and cream.... very quick and easy.
Those look yummy! We feasted on your hot corn yesterday during Easter dinner, and I had it again late last night mixed with ham, and again this morning for breakfast... so, so good but I will definitely have to limit it to a "feast" day sort of food. I also liked cooking it and eating it, too, because each time I did it made me think of you and I felt a connection to you in a new way. Thanks.
I have tried and tried to like sweet potatoes! It is one of the few foods I don't like, so over the years I've tried to find some way to eat them. I haven't succeeded yet. I don't even like them in desserts. I know they're so good for you! I'm afraid my dislike has extended to my kids, who won't touch them. My poor dh has to be content with getting them when we visit his parents, or cooking one in the microwave when I remember to buy one for him!

Liz made some sweet potatoes like that a while back... and they were YUMMY!! :)
The "snow" pics were really good! The snowman was cute... there were a few snowmen in waco, but I decided to "stay in"!! ;)
